This week I was racking my brain trying to think of something yummy to make for mother’s group. I’d recently seen lots of tasty looking cheesecakes on the web so I decided it was high time I gave a cheesecake a shot.

I admit I cheated a little and purchased a packet of biscuit base and just followed the recipe on there. A bit silly really given there was a packet of Marie biscuits in the cupboard. The topping was my own concoction it is:

• 1 can pie apple
• butter
• brown sugar
• pumpkin pie spice

I just mixed random quantities up in the saucepan on low heat until it tasted yummy, let it cool, then spread it over the chilled cheesecake.

The cheesecake was a hit! My next cheesecake is going to involve pumpkin puree. Yummo!
