Tonight we have a Green Chicken Curry on a bed of Basmati and a squeeze of lime.
1 chicken breast
1 can coconut flavoured evaporated milk
2 tablespoons green curry paste
rice and lime to serve
1. Stir fry curry paste until fragrant
2. Add chicken and stir fry until cooked
3. Add vegetables and stir fry for a few minutes
4. Add evaporated milk, turn heat down and simmer for 10-15 minutes.

That looks yummy and pretty healthy too! I must try out that evaporated milk in a curry.
