Fish’n’chips anyone?
Moroccan Swordfish with Oven Baked Wedges and Lime
This meal was absolutely delicious and very easy to prepare:
You’ll need:
Swordfish fillets, or any other firm white fish
Potatoes (ours are home grown!)
Tomatoes (cherry would work better)
Moroccan seasoning
Thyme
Limes
To cook:
Cut potatoes into wedges, spray with oil and bake in a hot oven until done (approximately 40 minutes)
Coat fish with seasoning and thyme. Place on a piece of baking paper on a baking tray. Arrange tomatoes around and on the fish, wrap with the baking paper and place in the oven until cooked (approximately 20 minutes)
Serve with wedges of fresh lime and a sprinkling of cracked pepper.
