White Chocolate and Cranberry Truffles
Each year we make the relatives we see over Christmas a bag of handmade treats. There’s usually a jam, a baked good, and a decoration for the tree. Last year we baked cinnamon shortbread, so this year we decided on truffles. Time wasn’t on my side this year, I needed something quick and easy, I found a recipe for Easy Chocolate Truffles on Taste, and adapted it to suit. This recipe is so easy to customise.
Ingredients
- 250 Grams Cream Cheese
- 225 Grams White Chocolate Melts
- 1 Cup Dried Cranberries
- 225 Grams Milk Chocolate
- Decorations

Instructions
- Use a food processor to chop cranberries into small pieces
- Use an electric mixer to beat the cream cheese until soft
- Melt the white chocolate according to manufacturers instructions
- Add the white chocolate and cranberries to cream cheese and stir to combine
- Place mixture in the fridge for at least two hours to firm
- Working quickly, shape teaspoons of the mixture into balls and place on a tray lined with foil
- Melt the milk chocolate in a bowl according to manufacturers instructions
- Using forks, dip the balls into the chocolate, rolling until coated, then set on the baking tray
- Sprinkle the balls with decorations
- Refrigerate until firm
